Mint Chocolate Chip Cupcakes

Following my failed attempt to pipe icing on the Memorial Day cupcakes, I tried a different icing recipe. This one used half butter and half shortening which allowed it to keep its shape this time! I added some green food coloring (gel) and some mint extract. The cake is just regular chocolate cake (box mix). I actually did not taste one of these, but I was told they were yummy!
